Crockpot Spanish Omelet-Casserole
- 12 eggs
- 8 slices dry thin sandwich bread
- 1/2 cup of cooked and drained bacon cut into small pieces
- 1/2 cup diced onions
- 1/2 cup diced green pepper
- 3/4 lb diced or shredded cheddar cheese
- 1 cup milk
- 1/2 tsp dry mustard
- salt and pepper to taste
As if you were making lasagna, layer your ingredients as such (bottom to top):
- sandwich bread
- bacon
- onions
- cheese
- sandwich bread
- bacon
- onions
- cheese
Now, beat the eggs, milk, mustard, salt and pepper together. Pour this over the whole mixture. Cook on low for ten to twelve hours.
